Loaded with flavor and super simple to prepare, this easy brown rice pilaf recipe is one of my favorite solutions for a side dish. And while most see this as a side dish, you can also prepare it as a main dish, too. The truth is, most rice dishes are very versatile. For centuries, rice has been used as a staple for entire civilizations. When an ingredient has been used for millennia, we can assume some pretty good recipes have been passed down. Also, contrary to popular belief, rice isn’t just an Asian product. Plenty of rice is harvested in North America, too, including wild rices as far north as Wisconsin!
With this easy brown rice pilaf, you’ll discover the perfect blend of flavor and coziness delivered by the minced onion mingling with the minced carrot and crushed cloves. Add to that the touch of lemon and you have the perfect rice dish to add to any entrée. Or, as mentioned earlier, you could just serve the dish by itself and find another light side dish to compliment it. I usually eat brown rice pilaf with a chicken dish. A basic grilled chicken breast will do. It’s totally up to you, though.

Ingredients
- 1 tbsp butter salted
- 1 onion minced
- 1 carrot minced
- 6 cloves peeled, crushed
- 2 c brown rice
- 1 lemon
- 1 c chicken broth
Instructions
- Heat large skillet on stove over medium high heat
- Melt butter and add onoin, carrot, and garlic
- Cook for five minutes
- Stir in rice and cook for another five minutes
- Juice the lemon and add it to the mix
- Add the broth
- Cover and cook for 50 minutes or until all liquid is absorbed
- Check frequently to ensure you don’t overcook
